  • 4 x 175g (6oz) thick portions cod or haddock
  • 2 courgettes, sliced
  • 2 tbsp olive oil
  • 12 cherry tomatoes
  • 125g (4½oz) green beans, topped and tailed
  • 8 black olives, pitted
  • Salt and black pepper

Method

  1. Preheat the oven to 200˚C400˚Fgas mark 6.
  2. Place the cod and courgettes into a large roasting tray and drizzle with half the oil.
  3. Roast for 5 minutes.
  4. Add the cherry tomatoes, green beans and olives. Season and drizzle with the remaining oil.
  5. Roast for a further 15 minutes or until the cod is cooked and vegetables slightly softened. Serve immediately.
