- 4 x 175g (6oz) thick portions cod or haddock
- 2 courgettes, sliced
- 2 tbsp olive oil
- 12 cherry tomatoes
- 125g (4½oz) green beans, topped and tailed
- 8 black olives, pitted
- Salt and black pepper
Method
- Preheat the oven to 200˚C400˚Fgas mark 6.
- Place the cod and courgettes into a large roasting tray and drizzle with half the oil.
- Roast for 5 minutes.
- Add the cherry tomatoes, green beans and olives. Season and drizzle with the remaining oil.
- Roast for a further 15 minutes or until the cod is cooked and vegetables slightly softened. Serve immediately.
