  • 55g (2oz) butter, softened
  • 1 garlic clove, crushed
  • Grated rind 1 lime
  • Pinch nutmeg
  • 55g (2oz) ready-prepared chestnuts
  • 650g (1lb 6oz) Brussels sprouts, trimmed

Method

  1. Mix together the butter, garlic, lime rind and nutmeg and beat.
  2. Roughly chop the chestnuts and add into the butter. Spoon the butter onto a piece of greaseproof paper and roll into a sausage shape. Refrigerate until ready.
  3. Cook the sprouts in a large pan of boiling salted water for 8-10 minutes until tender.
  4. Drain and return to the pan.
  5. When ready to serve, slice the butter and add to the sprouts.
