Chicken Saltimbocca

Easy chicken recipes don’t come much simpler than tender Chicken Saltimbocca. This scores high when you want a quick but satisfying meal – and if served with some steamed green veggies it’s stylish enough for dinner parties too. This Italian chicken recipe is an alternative to traditional Saltimbocca, which is generally made with veal. Beating the meat with a rolling pin helps to make tender chicken, while coating the meat in flour before frying gives it a nice coating.

The combination of Parma ham and sage complements the chicken perfectly. Parma ham gets its name from the Italian city of Parma where it originated in Roman times, and only hams produced within a strict geographical area are allowed to carry the name. Sage was also highly prized by the Romans – sage pickers had to perform a special ceremony before gathering it. Believed to help improve memory, this green herb also works well in egg recipes and tomato sauces.

Ingredients

  • 2 chicken skinless breasts
  • 2 slices Parma ham
  • 2 large sage leaves
  • 2 slices lemon
  • Flour for dusting
  • 2 tsp olive oil
  • Juice of ½ lemon
  • Salt and freshly ground black pepper

Method

  1. Put each chicken breast between 2 sheets of greaseproof paper and beat with a rolling pin until it is about 5mm thick.
  2. Place a slice of Parma ham on each breast, top with a sage leaf and finally, a slice of lemon.
  3. Secure with a cocktail stick and dust very lightly with flour on both sides.
  4. Heat the olive oil in a large non-stick frying pan, and add the chicken.
  5. Cook for 2-3 minutes on each side, until it is cooked and slightly golden brown.
  6. Serve the chicken drizzled with some of the lemon juice, but not too much.
