Chicken with White Wine and Mushrooms

  • 3 chicken breasts, skinned
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 200g (8oz) mushrooms, sliced or if small, chopped into quarters
  • 150ml (5fl oz) white wine
  • 200ml (7fl oz) double cream
  • 1 tbsp chopped parsley
  • Salt and freshly ground black pepper

Method

  1. Heat the olive oil over a high heat. Add the onions and allow them to soften before adding the garlic and chicken.
  2. Fry the chicken until it starts to colour. Then add the mushrooms before pouring in the wine.
  3. Allow the wine to boil and reduce by half before pouring in the stock. Simmer for 4-5 minutes or until the chicken is firm to the touch.
  4. Finally stir in the cream and parsley before seasoning with salt and pepper.
  5. Serve with boiled rice.

Very good recipe, i've never cooked it before and so thought it was a bit risky, however it was very easy and very quick to do and tasted delicious.
I would definately recommend this...

just made this for tea and its brilliant... i substituted double cream for batchelors condensed mushroom soup to maximise the flavours and it was wonderful =)
