- 3 chicken breasts, skinned
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 200g (8oz) mushrooms, sliced or if small, chopped into quarters
- 150ml (5fl oz) white wine
- 200ml (7fl oz) double cream
- 1 tbsp chopped parsley
- Salt and freshly ground black pepper
Method
- Heat the olive oil over a high heat. Add the onions and allow them to soften before adding the garlic and chicken.
- Fry the chicken until it starts to colour. Then add the mushrooms before pouring in the wine.
- Allow the wine to boil and reduce by half before pouring in the stock. Simmer for 4-5 minutes or until the chicken is firm to the touch.
- Finally stir in the cream and parsley before seasoning with salt and pepper.
- Serve with boiled rice.
