  • 4 chicken breasts, cooked and skin removed
  • 1 pink grapefruit, peeled
  • 1 yellow grapefruit, peeled
  • 50g (1¾oz) pistachios, shelled and chopped
  • ½ red onion, finely sliced
  • 2 tbsp virgin olive oil
  • Sea salt and crushed black pepper
  • 2 tbsp flat-leaf parsley leaves, roughly chopped
  • 2 tbsp mint leaves, roughly chopped

Method

  1. Rip the chicken into bite-sized pieces. Segment the grapefruit, collecting all the juices.
  2. Toss together the pistachios, onion, grapefruit segments and any juices in the olive oil and season well.
  3. Add the chicken and herbs, toss and serve.
