- 4 duck breasts
- Freshly ground salt and pepper
- 2 oz (50g) butter
- Juice of 2 large oranges
- 200ml (8floz) red wine
- 200ml (8floz) orange juice
- 100ml (4floz) duck or chicken stock
- 2 tbsp runny honey
Method
- Score the duck breasts with a knife and season.
- Melt the butter in a pan, then fry the duck breasts for about 2 or 3 minutes. Take off the heat and cover with foil to keep warm.
- Using the same pan, add the rest of the ingredients and simmer for five minutes.
- To serve, pour some suace over each duck breast and serve with vegetables.
