  • 4 duck breasts
  • Freshly ground salt and pepper
  • 2 oz (50g) butter
  • Juice of 2 large oranges
  • 200ml (8floz) red wine
  • 200ml (8floz) orange juice
  • 100ml (4floz) duck or chicken stock
  • 2 tbsp runny honey

Method

  1. Score the duck breasts with a knife and season.
  2. Melt the butter in a pan, then fry the duck breasts for about 2 or 3 minutes. Take off the heat and cover with foil to keep warm.
  3. Using the same pan, add the rest of the ingredients and simmer for five minutes.
  4. To serve, pour some suace over each duck breast and serve with vegetables.
