- 125g (4½oz) ready-to-eat apricots, finely chopped
- Grated zest and juice of ½ an orange
- 2.5cm piece fresh root ginger, peeled and grated
- 500g (1lb 1½oz) turkey breast mince
- 1 small red onion, finely chopped
- 15g (½oz) fresh coriander, chopped
- 2 tsp oil, for brushing
Method
- Place the apricots in a small bowl and add the orange zest, orange juice and ginger. Stir, then leave to stand for 5 minutes.
- In a large bowl, mix together the turkey mince, onion and coriander, then stir in the apricot mixture. Season, and mix well until all the ingredients are thoroughly combined. Divide the mixture into 4, and with wet hands, shape into burgers. If time allows, chill for 20 minutes.
- Preheat the grill.
- Brush the burgers with the oil and cook for 6-8 minutes on each side until thoroughly cooked.
- Serve with flour tortillas and a simple salad.
