Lemon Mousse with Mixed Berry Compote

  • 2 tbsp heaped agar flakes
  • 1 tbsp water
  • 2 tbsp lemon juice
  • 225g (8oz) ricotta cheese or creme fraiche
  • 200ml (7 fl oz) natural yoghurt
  • 2 tbsp caster sugar
  • 300g (10oz) frozen mixed berries or fresh berries
  • 25g (1oz) caster sugar

Method

  1. Sprinkle the agar flakes over the water and lemon juice in a small pan. Soak for 5 minutes.
  2. Heat gently and simmer until it dissolves, then leave to cool for 1-2 minutes.
  3. Place the ricotta or creme fraiche, yoghurt and sugar in a food processor. Add the agar mixture and beat in gently.
  4. Spoon into little moulds or ramekins and chill for at least 3-4 hours, but preferably overnight.
  5. To make the compote, place the berries in a pan with the sugar over a very low heat. Gently simmer for 5 minutes until the berries begin to soften – this may take longer if you are using frozen berries. Chill until required.
  6. To serve, turn out of the moulds and accompany with the berry compote or spoon a little compote on top of the wine glasses.
