- 1 medium onion
- 4 cloves
- 2 bay leaves
- 570ml (1 pint) semi-skimmed milk
- 200g (7oz) fresh white breadcrumbs
- ½ tsp freshly grated nutmeg
- 50g (1¾ oz) butter
- 2 tbsp double cream
Method
- Peel the onion, leaving the root intact and halve. Put two cloves into each half. Place the onion and bay leaves in a pan with the milk. Bring to the boil, then simmer for 20 minutes. Remove from the heat and leave to infuse for at least an hour.
- Remove the onion and bay leaves and stir in the breadcrumbs and nutmeg. Heat gently for 3-4 minutes. Stir in the cream and butter. Season. Add more milk if it is too thick.
