- 1 medium whole British quality chicken
- 2 tbsp olive oil
- Grated zest of 1 lemon
- Sea salt and freshly ground black pepper
- 1 red pepper, deseeded and quartered
- 1 green pepper, deseeded and quartered
- 4 courgettes, cut into large chunks
- 4 tomatoes, halved lengthways
- 3 garlic cloves, halved
- Fresh thyme, to garnish
Method
- Preheat the oven to 190°C375°Fgas 5.
- Place the chicken in a roasting pan and brush with a tablespoon of olive oil. Sprinkle over the lemon zest and season with the salt and pepper.
- Arrange the peppers, courgettes, and garlic around the edge. Drizzle the remaining oil over the vegetables and season well.
- Roast for 20 minutes per 500g, plus an extra 20 minutes. Serve the chicken surrounded with all the vegetables and garnished with thyme.
