- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 stick of celery, chopped
- 450g fresh tomatoes, chopped
- 1 tbsp tomato purée
- Pinch of sugar
- 4 tuna steaks
- 50g black olives, pitted and sliced
- 1 tbsp pine nuts
- 1 tbsp sultanas
- 4 tbsp capers, drained
- Salt and black pepper
- Parsley, to garnish
Method
- Heat half the oil in a saucepan, add the onion, garlic and celery and cook until starting to soften.
- Add the tomatoes, tomato puree, sugar, salt and black pepper, mix well then partially cover and simmer for about 20 minutes, stirring occasionally.
- Preheat the oven to 180˚C350˚Fgas mark 4. Heat the remaining oil in a large frying pan, add the fish and pan fry for 4-5 minutes on each side until lightly browned.
- Meanwhile, add the capers, olives, sultanas, pine nuts and simmer for 2 minutes, stirring.
- Spoon the tomato sauce into four bowls and top with the tuna.
- Garnish with the parsley and serve.
