Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 stick of celery, chopped
  • 450g fresh tomatoes, chopped
  • 1 tbsp tomato purée
  • Pinch of sugar
  • 4 tuna steaks
  • 50g black olives, pitted and sliced
  • 1 tbsp pine nuts
  • 1 tbsp sultanas
  • 4 tbsp capers, drained
  • Salt and black pepper
  • Parsley, to garnish

Method

  1. Heat half the oil in a saucepan, add the onion, garlic and celery and cook until starting to soften.
  2. Add the tomatoes, tomato puree, sugar, salt and black pepper, mix well then partially cover and simmer for about 20 minutes, stirring occasionally.
  3. Preheat the oven to 180˚C350˚Fgas mark 4. Heat the remaining oil in a large frying pan, add the fish and pan fry for 4-5 minutes on each side until lightly browned.
  4. Meanwhile, add the capers, olives, sultanas, pine nuts and simmer for 2 minutes, stirring.
  5. Spoon the tomato sauce into four bowls and top with the tuna.
  6. Garnish with the parsley and serve.
