Pear and Stilton Bruschetta

  • 1 French stick, sliced
  • 2 tbsp rocket-flavoured oil
  • 2 small ripe pears, washed
  • Juice of ½ lemon
  • 200g (7oz) Blue Stilton
  • A few additional rocket leaves for garnish

Method

  1. Preheat the oven to 200°C400°Fgas mark 6.
  2. Place the bread slices on a baking sheet and drizzle with the oil. Bake for 10 minutes, turning halfway through, until starting to crisp. Leave to cool.
  3. Cut the pears into quarters, remove the core. Slice then toss in the lemon juice. Crumble the Stilton.
  4. Top each bread slice with 2-3 pear slices and the Stilton. Cook in the oven for a further 12-15 minutes until the Stilton is lightly browned. Cut into quarters, arrange on a serving platter and garnish with the rocket.
