- 1 French stick, sliced
- 2 tbsp rocket-flavoured oil
- 2 small ripe pears, washed
- Juice of ½ lemon
- 200g (7oz) Blue Stilton
- A few additional rocket leaves for garnish
Method
- Preheat the oven to 200°C400°Fgas mark 6.
- Place the bread slices on a baking sheet and drizzle with the oil. Bake for 10 minutes, turning halfway through, until starting to crisp. Leave to cool.
- Cut the pears into quarters, remove the core. Slice then toss in the lemon juice. Crumble the Stilton.
- Top each bread slice with 2-3 pear slices and the Stilton. Cook in the oven for a further 12-15 minutes until the Stilton is lightly browned. Cut into quarters, arrange on a serving platter and garnish with the rocket.
