Shop-bought pizzas don’t even compare to a homemade one, but if you are busy and don’t have time to make homemade dough these pizza baguettes are just as delicious and far healthier.

- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 garlic clove, crushed
- 300g (12oz) cherry tomatoes, halved
- 1 baguette
- A selection of your favourite pizza toppings: ham, salami, peppers, anchovies, olives, chicken, rocket
- 150g (6oz) grated Cheddar
- Salt and freshly ground black pepper
Method
- Heat a frying pan over a medium heat and add the olive oil. Fry the onion until soft then add the garlic and cherry tomatoes. Cook over a medium heat until the tomatoes have broken down and the watery juices have evaporated, leaving you with a lovely thick tomato sauce. Season with salt and pepper and a little sugar if the tomatoes are not sweet enough.
- Preheat the oven to 180˚C350˚Fgas mark 4.
- Slice the baguette in half horizontally and then into portions about 20cm long. Spread a little of the fresh tomato sauce onto the baguette and then top with your choice of pizza toppings followed by a sprinkle of cheese. Place on a baking tray and then pop them into the oven and bake until the cheese has melted and become golden.
- Serve hot with salad.
