  • 150ml (5floz) sparkling white wine
  • 200ml (7floz) water
  • 150ml (5floz) strawberry and blueberry squash
  • 1 sachet (approx 11g or ¼oz) powdered gelatine
  • 55g (1¾oz) blueberries, washed
  • Strawberries, to garnish

Method

  1. Take 5 tablespoons out of the 200ml water and pour into a small saucepan. Sprinkle the gelatine over the top, taking care that it is completely absorbed by the liquid and that there are no dry patches – it should look sponge-like. Avoid stirring if possible and set aside for at least 5 minutes.
  2. Put the pan over a low heat, allow the gelatine to melt without boiling, the liquid should be clear.
  3. Place the remaining water, wine and squash into a pan and heat for 1 minute or until hot, but not boiling. Stir the dissolved gelatine into the mixture and leave to stand for 15 minutes to cool.
  4. Place a few blueberries into four glasses. Pour the jelly into the glasses and chill.
  5. Serve topped with half a strawberry.
