Avocado Hummous

  • 1 can chickpeas
  • juice of 1-2 lemons
  • large splash olive oil
  • spoonful tahini
  • crushed garlic (optional)

Method

  1. You can make this recipe by hand in a bowl with a fork, which gives a lovely rough texture to the hummous, or in a food processor for a smoother texture. You don't need precise quantities for this receipe - you can add more or less oil, lemon juice or tahini according to how you prefer it. If you don't have any tahini, you can still go ahead - it tastes great anyway!
  1. If you use a food processor, just put the avocado, chickpeas, half the lemon juice initially, a desertspoonful of tahini and a splash (say a tablespoonful) of olive oil into the bowl, plus a bit of crushed garlic if you want (about half a clove). Process until mixed and smooth. Taste it and if you want a little more bite, add more lemon juice. Add salt and pepper to taste. Process again. And it's ready!
  1. If you are making in a bowl: put the avocado and chickpeas in the bowl and mash well together with a fork. Add the lemon juice, tahini and olive oil and garlic (if using). Mix it up! Taste it, and season with salt and pepper. As above, add more lemon juice if you want more kick.
  1. As a variation: you could add the zest of the lemon for a delicious lemony flavour.
  1. Serve as you would normal hummous. Enjoy!
