Salmon is a very healthy fish to include in your diet, it's up there as one of the superfoods as it contains healthy oils that improve your brain power, helping to improve concentration. Luckily there are plenty of easy tinned salmon recipes so you can reap the benefits.
Stuff halved beef tomatoes (remove flesh and seeds) with a mixture of salmon, avocado and mayonnaise.
Bake sweet potatoes in the oven until tender. Slice each lengthways until they are nearly cut in two; spoon in a mixture of sour cream and chopped chives and top with chunks of salmon. Season to taste and serve with a green salad.
Tinned salmon recipes don't get easier than this! Mix salmon with cream cheese, lemon juice, salt and pepper and spread this over tortillas. Top with chopped cucumber, tomatoes, red pepper – any selection of veg you like – add a lettuce leaf, roll up and it's ready to serve.
Make salmon fishcakes by mixing equal amounts of salmon and mashed potato, bind with beaten egg. Shape into rounds and refrigerate for 30 minutes before cooking.
Lightly fry onions and mushrooms and add chunks of salmon. Make a white sauce and combine this with the salmon mixture. Top with mashed potatoes and grated cheese. Pop in a hot oven and cook until the top is brown.
Combine drained salmon with your choice of chopped cooked vegetables and a tin of tomatoes. Heat gently and serve with cooked pasta.
