Sausage and bean casserole

  1. Baked beans make a delicious addition to a sausage casserole – perfect for chilly days! Grill the sausages and at the same time fry some onion and garlic in a pan with some oil. When the sausages are cooked, chop them into fairly large chunks and put in the pan with the onion and garlic and add a tin of chopped tomatoes, some stock, Worcestershire sauce, chopped carrots and chopped celery. Bring it to the boil and simmer for 10 minutes, then bake in an ovenproof casserole dish in a hot oven for about 45 mins.

  2. Ring the changes with Chilli Con Carne by using baked beans instead of kidney beans.

  3. Perk up your baked beans by giving them a smoky, barbecue flavour. Fry some garlic in 2 tablespoons of olive oil, then add 2 tablespoons vinegar, a tablespoon of Worcestershire sauce and the baked beans. Taste and add a little brown sugar to sweeten if required.

  4. Baked beans make a great addition to Shepherd’s Pie: simply add a large can to the meat and onion mix once it’s cooked, along with some Worcestershire sauce, chopped cooked carrots and peas. Put in a casserole dish, top with mashed potato and cook in a hot oven for about 25 minutes.

  5. Why not curry your baked beans? Fry some onion, then add some cumin, garam masala, turmeric and paprika and fry in the pan with the onion for a few minutes. Then add the baked beans and simmer for about ten minutes.

  6. For a quick and filling comforting meal, nothing beats a jacket potato topped with baked beans and grated cheddar.
