For a filling veggie burger, mash some tinned chickpeas then combine with some cooked chopped onion and grated carrot. Divide the mixture into six burgers, then coat each in egg, then in breadcrumbs and grill or fry until cooked.
Make yourself a healthy packed lunch by making chickpea salad. Mix tinned chickpeas (drained) with chopped tomatoes, onion, cucumber, feta cheese and some lemon juice. This makes a nice accompaniment to Lamb Koftas.
