Fruit scones

  1. Sultanas will add fruity goodness, fibre and extra sweetness to scones. First, preheat your oven to 220°C, 425°F, gas mark 7. Rub 50g (2oz) butter into 200g (8oz) self-raising flour until it forms breadcrumbs, then stir 25g (1oz) of sultanas into the mixture. Add a little milk until the mixture binds but is not too wet. Roll it out onto a floured surface, until it’s about ¾ inch thick, then cut out scones using a cutter. Bake on a greased baking sheet for ten minutes or until golden on top.
  2. Add sultanas to some natural yoghurt and nuts for a wholesome breakfast or snack.
  3. Make Banana and Sultana Bread. Preheat the oven to 220°C, 425°F, gas mark 7. Sieve 400g (16oz) self-raising flour into a bowl and add 2 teaspoons of mixed spice. Rub 100g (4oz) butter into the flour to make breadcrumbs. Add 15g (½ oz) sugar, 200g (8oz) sultanas and a large sliced banana to the breadcrumb mix. Then slowly add 250ml semi-skimmed milk and stir. Pour the mixture into a greased loaf tin and cook for 20 minutes.

  5. Love curry? Sultanas bring a touch of sweetness that works well with chicken curries.
  6. Stuck for a quick dessert? Soak some sultanas in some warmed red wine, port or rum for 20 minutes then serve with some vanilla ice cream and a sprinkling of nuts.
