Brighten up mealtimes with this sunshine vegetable

Sweetcorn soup

  1. Sweetcorn makes a fantastic soup (pictured) – fry some garlic and onion in some oil, then add sweetcorn, some vegetable stock and cubed potato and simmer until the potato is tender. Add a little single cream and, if you want a smooth soup, blend.

  2. Tuna mayonnaise and sweetcorn is a classic pairing and makes a perfect filling for sandwiches or baked potatoes.

  3. A sweetcorn topping will add a little crunch to your homemade pizza or to nachos with melted cheese and guacamole.

  4. Sweetcorn fritters make a refreshing change for a quick lunch. Make a simple batter using plain flour, milk and egg and add the corn. Then, heat some oil in a frying pan and fry spoonfuls of the mixture until crispy.

  5. Add colour, crunch and a touch of sweetness to a salsa sauce by adding some sweetcorn.

  6. Chicken and sweetcorn pie makes a hearty, filling evening meal. Take some ready-prepared pastry and make a pastry lining for a pie dish, reserving enough for a lid. Then mix some chopped, cooked chicken breast with some sweetcorn, mustard and double cream, season and put into the pie dish. Lastly, top with a pastry lid and cook in a hot oven for about half an hour.
