A hearty way to start the day

When you DJ for Radio 1 and host the BBC’s coverage of festivals like Glastonbury, there isn’t much chance to experiment with recipes. So when Scots-born Edith cooks for friends, the recipe has to be reliable and simple. (She admits to once cooking her own festival food and inadvertently almost poisoning her friends in the process!)

Her job makes for late nights, and Eggs Benedict is a bit like a festival goer’s favourite all-day breakfast. “I used to work in our family hotel and learned this recipe from watching my mother make it for the guests.” There is a knack to making hollandaise sauce, but once you have mastered it there's no looking back!

Edith has a top tip should your sauce look as if it is about to separate: quickly remove it from the heat, dunk the outside of the pan into cold water and whisk very hard. It will usually come round. If it still fails then start again with a clean bowl and fresh egg yolks and add the curdled mixture slowly to the new eggs, beating all the time.
