As personal stylist to movie stars and pop icons, Nicky Clarke is one of Britain’s most famous and trusted hairdressers. He won’t reveal his clients’ secrets, but he’s happy to share his favourite dish, Mediterranean Chicken Stew, for entertaining friends. The trick, he says, is to make it in advance, so you can spend as much time as possible with guests.
“Giving a dinner party, I always try to do the least amount of work. I tend to do things that I can put into a big pot and maybe even cook the day before.” He also doesn’t see a problem with using a bought sauce to make life easier in the kitchen, as there are some amazing quality ready-made sauces on the shelves these days.
Nicky’s ideal is to make up a big main dish and serve it so everyone can help themselves. That gives him time to make an effort with the presentation and surroundings, which are equally important to him.
Here’s a useful tip – cooking in a hot kitchen can make your hair go flat. Luckily a fan was at hand in Simon’s kitchen to cool them both down and to blow back Nicky’s hair into a soft windswept style!
