- 120g self raising flour
- 140g caster sugar
- 1.5 teaspoons of baking powder
- 40g of unsalted butter
- 120ml milk
- 1 egg
- 14 teaspoon of vanilla extract
- 250g icing sugar
- 2 tablespoons extra of milk
- food colouring
- 100s and 1000s or silver balls to decorate
- 80g extra of unsalted butter
Method
- Preheat your oven to 170c or gas mark 3
- Pour the flour, sugar, baking powder and butter in a mixer and beat on slow speed until everything is combined and you get a sandy consistency
- Slowly pour in half the milk and beat until incorporated
- Whisk the egg, vanilla extract and the other half of the milk in a separate bowl and then pout into the flour mixture and beat until all mixed together and smooth
- Spoon the mixture into pretty paper cases and bake in oven for 20-25 minutes (keep your eye on them!) Once baked do the cake test with a knife- if it comes away clean they are ready!
- Leave the hot cakes to cool on a wire rack. Now the fun part. the frosting and decorating.
- Beat the icing sugar and butter in an electric mixer or a handheld electric whisk until fully mixed
- Mix the milk and a couple of drops of vanilla extract in a separate bowl then add to the butter mixture little by little
- Then mix at high speed and beat until the frosting is light and fluffy (will take about 5 mins)
- Use the food colouring to tint the icing as desired and swirl on top of cakes- a cool fork may help
- Add the hundreds and thousands for an irresistible treat- silver balls are also popular- go wild the better they look the better they taste!!
