Cupcake Heaven

Perfect with tea, the ultimate afternoon treat

  • 120g self raising flour
  • 140g caster sugar
  • 1.5 teaspoons of baking powder
  • 40g of unsalted butter
  • 120ml milk
  • 1 egg
  • 14 teaspoon of vanilla extract
  • 250g icing sugar
  • 2 tablespoons extra of milk
  • food colouring
  • 100s and 1000s or silver balls to decorate
  • 80g extra of unsalted butter

Method

  1. Preheat your oven to 170c or gas mark 3
  2. Pour the flour, sugar, baking powder and butter in a mixer and beat on slow speed until everything is combined and you get a sandy consistency
  3. Slowly pour in half the milk and beat until incorporated
  4. Whisk the egg, vanilla extract and the other half of the milk in a separate bowl and then pout into the flour mixture and beat until all mixed together and smooth
  5. Spoon the mixture into pretty paper cases and bake in oven for 20-25 minutes (keep your eye on them!) Once baked do the cake test with a knife- if it comes away clean they are ready!
  6. Leave the hot cakes to cool on a wire rack. Now the fun part. the frosting and decorating.
  7. Beat the icing sugar and butter in an electric mixer or a handheld electric whisk until fully mixed
  8. Mix the milk and a couple of drops of vanilla extract in a separate bowl then add to the butter mixture little by little
  9. Then mix at high speed and beat until the frosting is light and fluffy (will take about 5 mins)
  10. Use the food colouring to tint the icing as desired and swirl on top of cakes- a cool fork may help
  11. Add the hundreds and thousands for an irresistible treat- silver balls are also popular- go wild the better they look the better they taste!!
