These Broccoli & Corn Fritters are the ultimate summer dish, perfect as a snack, side or light bite for dinner. Crunchy on the outside and soft on the inside, each bite is a celebration of summer produce.

Proof that simple ingredients can create something truly special. Light, flavourful, and endlessly adaptable - they’re bound to become a mid-week staple.

What you'll need:

  • 1 small head of broccoli, finely chopped
  • 350g sweetcorn (fresh, frozen, or canned)
  • 170g plain flour
  • ½ tsp baking powder
  • 2 eggs
  • 60ml milk
  • 170g grated cheese (cheddar or parmesan)
  • 2 spring onions, finely chopped
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Olive oil for frying

Method:

  1. Bring a pot of water to a boil
  2. Add the chopped broccoli, and cook for 2 minutes
  3. Drain and rinse with cold water
  4. To make your batter whisk together flour, baking powder, eggs, and milk until smooth
  5. Stir in the broccoli, sweetcorn, cheese, spring onions, garlic powder, paprika, salt, and pepper – mix well
  6. Heat a little olive oil in a pan over medium heat
  7. Drop spoonful’s of the mixture and flatten slightly
  8. Cook for 2-3 minutes per side until golden brown and crispy
  9. Serve warm with sour cream, yogurt dip, or a squeeze of lemon

Tip: - Add a pinch of chilli flakes or chopped jalapeño for a spicy twist.
