Broccoli & Corn Fritters
These Broccoli & Corn Fritters are the ultimate summer dish, perfect as a snack, side or light bite for dinner. Crunchy on the outside and soft on the inside, each bite is a celebration of summer produce.

What you'll need:
- 1 small head of broccoli, finely chopped
- 350g sweetcorn (fresh, frozen, or canned)
- 170g plain flour
- ½ tsp baking powder
- 2 eggs
- 60ml milk
- 170g grated cheese (cheddar or parmesan)
- 2 spring onions, finely chopped
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & pepper to taste
- Olive oil for frying
Method:
- Bring a pot of water to a boil
- Add the chopped broccoli, and cook for 2 minutes
- Drain and rinse with cold water
- To make your batter whisk together flour, baking powder, eggs, and milk until smooth
- Stir in the broccoli, sweetcorn, cheese, spring onions, garlic powder, paprika, salt, and pepper – mix well
- Heat a little olive oil in a pan over medium heat
- Drop spoonful’s of the mixture and flatten slightly
- Cook for 2-3 minutes per side until golden brown and crispy
- Serve warm with sour cream, yogurt dip, or a squeeze of lemon
Tip: - Add a pinch of chilli flakes or chopped jalapeño for a spicy twist.
