Shredded Chicken, Houmous and Pitta Bread

This nutritious meal has a great balance of lean protein from the chicken breast and healthy fats from the houmous. The pitta bread’s full of carbohydrates and fibre which delivers a boost of energy and can aid digestion.
What you'll need:
- Houmous
- White pitta bread
- 2 x chicken breasts
- 1 ½ teaspoons salt
- 1 teaspoon ground black pepper
- ½ teaspoon tumeric
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon parsleyÂ
- 2 tablespoons fresh coriander (optional)
- 2 tablespoons olive oil

Method:
- Add the chicken breasts to a saucepan and cover with 700ml cold water.Â
- Stir in the salt and ground black pepper and bring to a gentle simmer over a medium heat.Â
- Cover with a saucepan lid and reduce to a low heat.Â
- Take care not to boil the chicken as this can make the chicken tough.
- Cook for 10-12 minutes until cooked through then transfer the chicken to a plate and rest for 10 minutes.Â
- Grab two forks and gently shred the meat.
- Mix the turmeric, cumin, paprika and parsley in a small bowl and place to the side. Â
- Heat a large pan with a splash of olive oil then add your shredded chicken and spice mix.
- Stir until the chicken is well coated.Â
- Take the pan off the heat and place to the side.
- Put your pitta breads into the toaster and grab your serving bowls.Â
- Scoop as much houmous as you like into the bowls and place your shredded chicken on top.Â
- Once your pittas are toasted, cut them in half and place in your bowl.Â
- Finish with a sprinkling of freshly chopped coriander (optional).
