Summer Roasted Vine Tomatoes with Garlic & Basil
These Summer Roasted Vine Tomatoes are irresistibly sweet, tender, and bursting with flavour. The vine holds the tomatoes together as they caramelize, intensifying their natural sugars and infusing every bite with rustic charm. Serve them with bbq meats, or toss them into pasta, or simply enjoy on some crusty bread with a drizzle of olive oil!

What you'll need:
- 6-8 vine-ripened tomatoes (kept on the vine for extra flavour)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp balsamic vinegar
- 1 tsp honey (optional, for extra caramelization)
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp dried oregano
- A handful of fresh basil leaves
- Optional: crumbled feta for serving
Method:
- Preheat the oven to 180°C (350°F)
- Wash the vine tomatoes and place in a baking dish, keeping them attached to the vine
- Drizzle with some olive oil and balsamic vinegar
- Sprinkle with garlic, salt, pepper, oregano, and honey and toss gently to coat
- Bake for 20-25 minutes until the tomatoes are soft, blistered, and slightly caramelized
- Remove from the oven and scatter fresh basil leaves over the top.
- Serve & Enjoy!
Tip: Top some toasted sourdough with the roasted tomatoes and some parmesan shavings
