Tomato salsa with tortilla chips
This simple tomato salsa recipe combines tinned chopped tomatoes with finely chopped onion, garlic and a touch of fresh chilli for a little kick. Fresh tomato salsa can take a long time to prepare as you’ve got to finely dice your tomatoes. But this version is quick to make and has a slightly softer texture that’s perfect for dipping or using as a topping.
What you'll need:
- 400g chopped tomatoes in tomato juice
- ½ red onion
- 1-2 garlic cloves
- 1 fresh red chilli
- Juice of ½ lime
- 1 tablespoon olive oil
- Small handful of fresh coriander
- Salt and ground black pepper to taste
- Salted tortilla chips to serve

Method:
- Pour the chopped tomatoes into a bowl and use a fork or a knife to break up the tomatoes.
- Finely chop the onion and mince the garlic and chilli. Add these ingredients to the bowl too.
- Stir in the lime juice, olive oil and salt and pepper.
- Mix everything well and add more seasoning if needed.
- Pour your salsa into a bowl and serve with some tortilla chips.
- Chop the fresh coriander and sprinkle over the top.
