This watermelon and feta salad will make the perfect side dish at your next barbecue. The watermelon is refreshing and juicy while the feta is salty and tangy. Adding fresh mint brightens and cools your salad and the drizzle of balsamic glaze adds more sweet acidity. Who knew a dish so quick and easy to chuck together could have so much flavour?

What you'll need:

  • 180g watermelon slices
  • 100g feta cheese
  • Sprinkle of sunflower seeds
  • 1 tablespoon balsamic glaze
  • 1 tablespoon olive oil 
  • Sprig of mint

Method:

  1. Chop your watermelon slices and feta cheese into cubes.
