Sausages are a kitchen staple and a key ingredient in many dinners across the nation. We'll show you how you can jazz them up and add some interesting and tasty sausage recipes to your repertoire.

 

Hot Dogs with Homemade Red Onion Marmalade

 

Serves 4

Ingredients:

  • 1 pack sausages (6)
  • 2 medium red onions, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp brown sugar
  • 2 tbsp malt vinegar
  • 1 pack hot dog buns
  • Gherkins

Method:

  1. Pop your sausages in the over (or a 200c oven) for around 20 minutes, turning often to ensure even cooking.
  2. For your onions, heat the olive oil in a pan over a medium heat and add your sliced onions. Soften for 6-8 minutes.
  3. Add your sugar and balsamic vinegar to a pan and let reduce to make a sticky marmalade.
  4. Split your buns and add a sausage and a good helping of onions to each.

Sausage Cider Casserole

 

Serves 4

Ingredients:

  • 2 tbsp olive oil
  • 1 pack sausages (6)
  • 6 rashers streaky bacon, roughly chopped
  • 1 white onion, sliced
  • 2 tbsp plain flour
  • 500ml cider
  • 1 tsp Dijon mustard
  • 1 small handful parsley, chopped

 

Method:

  1. In a large casserole dish, heat the olive oil over a medium heat. Add your sausages and brown on each side – around 5 minutes. Remove from the dish and set aside.
  2. Add a splash more oil if the pan looks dry and then add your bacon and cook until crisp, then add the onion and cook until the onions are soft and golden brown.
  3. Sprinkle over the flour and cook out for 3 – 4 minutes until it smells nutty and has coated the bacon and onions. Pour in the cider, stirring all the time and then add your mustard.
  4. Pop the sausages back in the dish and then simmer for 25 – 30 minutes until the sauce is thick and the sausages are cooked through.  Sprinkle over the parsley before serving and serve with mashed potatoes and green beans

Sausage Bake

 

Serves 4

Ingredients:

  • Olive oil
  • 1 red peppers, sliced
  • 1 yellow pepper, sliced
  • 400g cherry tomatoes
  • 2 medium red onions, quartered
  • 400g new potatoes, HALVED
  • 2 tsp dried oregano
  • 1 small handful thyme, leaves picked
  • 1 tsp sea salt
  • 1 tsp cracked black pepper
  • 4 sausages
  • 4 garlic cloves, roughly chopped

Method:

  1. Preheat your oven to 200c. In a large baking dish, add all your vegetables, herbs and seasoning and mix together with 2 tbsp olive oil. [At this stage you can cover and leave in the fridge until ready to cook later that night.] Roast for 10 minutes.
  2. Stir the garlic through the veggies and then pop your sausages on top. Return to the oven and bake for 25/30 mins until the sausages are golden brown and the vegetables golden and tender. Serve immediately with a green salad.
