Rainbow Ice Pops
Make summer a rainbow -turn juicy fruit into icy rainbow magic! Grab your favourite fruit juices, layer the colours and pop them in the freezer. Kids + popsicles = endless smiles!
Ingredients
- 1 cup strawberries (red layer)
- 1 cup mango or peaches (orange layer)
- 1 cup pineapple (yellow layer)
- 1 cup kiwi or green grapes (green layer)
- 1 cup blueberries or blackberries (purple/blue layer)
- 2–4 tbsp honey (optional, to taste)
- Splash water or coconut water (to help blend)
Method
- Prep the fruit - wash, peel, and chop the fruit of your choice into small pieces so they blend smoothly
- Blend your first fruit with a splash of water and a little honey if needed. Pour a thin layer into each popsicle mould and freeze for 20–30 minutes until just firm
- Repeat with each colour, freezing between each one so the colours stay clean and defined
- Insert your lolly sticks once the second layer is semi‑frozen so they stand upright
- Freeze the completed ice pops for at least 4 hours or until solid.
Ice Cream Sandwich
Stack it. Squish it. Snack it! Summer fun is served, let the kids get creative with their very own ice cream sandwich creations -mix, match and munch.
Ingredients
- Cookies
- 3–4 cups Ice cream (vanilla, chocolate, or any flavour)
- 1 cup optional coatings: sprinkles, mini chocolate chips, nuts, crushed biscuits
Method
- Let the ice cream sit at room temperature for 5–10 minutes until scoopable but not melted
- Lay out half the cookies flat-side up. Try to pair cookies of similar size for even sandwiches
- Scoop ice cream onto each cookie (about ¼–½ cup), then top with a second cookie and gently press to spread the ice cream to the edges
- Roll the edges of each sandwich in sprinkles, nuts, or chocolate chips if you want extra texture
- Place sandwiches on a tray and freeze for at least 1 hour to firm up before serving
Iced-Coffee
Cool, creamy and made just the way you like it. Homemade iced coffee is the perfect way to sip into summer.
Ingredients
- 1 cup freshly brewed coffee (strong)
- 1/2–1 cup ice cubes
- 2–4 tbsp milk or cream (optional)
- 1–2 tsp sugar or syrup (optional)
Method
- Brew a strong cup of coffee and let it cool slightly
- Fill a glass with plenty of ice cubes
- Pour the cooled coffee over the ice
- Add milk or cream if you like it creamy
- Sweeten with sugar or syrup, then stir and enjoy
Garlic Bread
Golden on the outside and soft in the centre - garlic bread is the ultimate summer side. Easy to share and packed with flavour - it’s the perfect companion to all your summer favourites.
Ingredients
- 1 large crusty baguette or ciabatta
- 100 g softened butter
- 3–4 cloves garlic, finely minced
- 2 tbsp fresh parsley, chopped
- 1–2 tbsp olive oil
- 1/2 tsp salt
- Optional grated Parmesan or mozzarella
Method
- Mix softened butter with minced garlic, parsley, salt, and a drizzle of olive oil until smooth.
- Cut the bread into thick slices or split lengthwise for larger pieces
- Coat each slice with the garlic butter mixture. Add cheese if using.
- Place bread butter‑side up on a medium‑hot grill. Close the lid and cook 3–4 minutes until the edges start to crisp.
- Enjoy immediately while hot and soft in the centre.
