Air Fryer Fajitas
These air fryer fajitas are a quick, fun and family-friendly twist on a classic. We’ve chosen breaded chicken nuggets for this recipe to speed up the prep and cooking time. The nuggets are also seasoned and coated in breadcrumbs so you don’t need extra oil, marinades or cheese to add flavour and crunch.

We recommend pairing the nuggets with plenty of peppers, onions and a little bit of lettuce to provide a boost of vitamins, antioxidants and fibre. You can always prep your veggies ahead of time and store them in the freezer for up to 3 months.
What you'll need:
1 red pepper
1 yellow pepper
1 medium white onion
1 tablespoon of olive oil
1 teaspoon smoked paprika
½ teaspoon chilli powder or mild fajita seasoning
Salt and pepper to taste
Iceberg lettuce
4-6 soft tortillas
Method:
- Place your chicken nuggets in the air fryer and cook at 180°C for 10-12 minutes
- While the chicken nuggets cook, slice the peppers and onion and toss in a bowl with the olive oil. Add the spices and salt and pepper and mix until everything’s evenly coated.
- Add the seasoned veg to the air fryer and cook at 180°C for 8-10 minutes, shaking once, until soft and lightly charred.
- While the veg cooks in the air fryer you can wash and chop the lettuce and set aside.
- Slice the cooked chicken nuggets. Warm the tortillas in a microwave. Fill each tortilla with veggies, chicken and lettuce.
- Roll up and enjoy while everything is warm and crispy.
