How to make Chakalaka

What you'll need:

  • 400g tin baked beans
  • 400g chopped tomatoes
  • 280g basmati rice
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 2cm piece of ginger, peeled and grated
  • 2 carrots, diced
  • 1 red pepper, diced
  • 20ml olive oil
  • 50g tomato puree
  • 1 tbsp curry powder - season to taste

Method:

  1. Fry the onion on a low heat with the garlic, ginger, tomato paste and curry powder for approximately 5 minutes to release the aroma of the spices and soften the onion.
  2. Add the chopped tomatoes, carrots and red pepper and cook covered for a further 15 minutes.
  3. Meanwhile cook the rice according to the packet instructions.
  4. Add the tin of baked beans to the sauce, and simmer for a further 3 minutes so the beans are warmed through.
  5. Serve with the rice.
