Egg Fried Rice

This easy egg fried rice recipe is a quick, nutritious meal packed with flavour and it’s ready in minutes. Using microwave rice, peas and green beans keeps prep simple while adding colour, fibre and natural sweetness. Lightly scrambled eggs bring protein and richness, creating a healthy dish that’s perfect for busy weeknights, lunches or using up leftovers.

To make the best egg fried rice we recommend using a high heat and minimal oil. This egg fried rice recipe is a healthier choice because it’s high in fibre, low in saturated fat and rich in protein. You can always use whatever vegetables you have left over, giving your dish even more nutritional value.

What you'll need:

  • 100g green beans
  • 2 eggs
  • 1 tablespoon of sesame oil
  • 2 spring onions
  • 2-3 tablespoons of soy sauce
  • 150g garden peas
  • 1 garlic clove
  • 250g Long Grain Rice (use microwaveable rice for a quick alternative)
  • Salt and pepper to taste

Method:

  1. Microwave the peas for 2-3 minutes until hot. Chop the ends of the green beans and cut into thirds. Microwave them for 2 minutes until tender then set aside.
  2. Heat the oil in a large pan or wok over a medium-high heat. Crack in the eggs, scramble quickly then push to one side of the pan.
  3. Cook your rice as per packet instructions. If using microwave rice, add it directly to the pan and stir to combine with the eggs. Add in the soy sauce, garlic, salt and pepper.
  4. Stir in the cooked peas and green beans. Fry for another 3-4 minutes stirring often.
  5. Once everything is heated through and lightly toasted you can taste and adjust seasoning. Add spring onions, chilli flakes, or sesame seeds if you like. Serve hot as a main meal or side dish.
