Looking for a light, pretty dessert that feels a little bit special? These Japanese-style strawberry sandos are soft, creamy and perfectly sweet. Made with fluffy milk bread, fresh strawberries and lightly whipped cream, they’re ideal for brunch, picnics or an easy no-bake treat.

This trending Japanese treat is all about simplicity and presentation. With just a few ingredients, you can create a beautiful, café-style dessert at home. The key is arranging the strawberries carefully so you get that iconic cross-section when sliced.
What you'll need:
• 8 slices soft white milk bread (crusts removed)
• 200ml double cream
• 2 tbsp icing sugar
• 1/2 tsp vanilla extract
• 12–16 fresh strawberries (similar size, hulled)
Method:
- Whip the double cream, icing sugar and vanilla extract together until soft peaks form. You want it thick enough to hold shape, but still light and spreadable.
- Lay out your slices of bread and spread a generous layer of whipped cream onto each one.
- Arrange the strawberries on one slice of bread. Place them in a diagonal line from corner to corner – this will give you that signature pattern when you cut the sandwich.
- Add a little extra cream around and on top of the strawberries to hold everything in place.
- Top with another slice of bread and gently press down.
- Wrap each sandwich tightly in cling film and chill in the fridge for at least 30 minutes.
Top tip: Chilling helps the cream set and makes slicing much cleaner. - Remove from the fridge, unwrap and slice diagonally with a sharp knife.
- Serve immediately and enjoy your perfectly neat, sweet strawberry sandos.
