Our energy balls are the perfect healthy snack with a cuppa or before your workout, to give you an extra push.
What you'll need
1 cup soft/dried apricots
2 cups cashews
1 tbsp chia seeds
1 tsp cinnamon
dash of alternative milk (we like oat milk)
1. Add dry ingredients to a blender or food processor. Blend until a paste consistency is formed.
2. If the texture is too dry, help with a dash of dairy-free milk. You should be able to easily press the mixture between your fingers to form a sticky dough.
3. Scoop out 1 tbsp at a time of the mixture and use your hands to roll into a ball, then dip each ball into desiccated coconut.
4. Place in the fridge for 30 minutes before enjoying!
