How to Make Parfait

Sitting somewhere between a mousse and a cheesecake, homemade parfait isn’t actually that hard to make – as long as you’re patient. With the right ingredients and a little effort, you could be enjoying a newfound love for parfait you never knew you had...

What you'll need:

  • 100ml water
  • 2 Egg Yolks
  • 40g Icing Sugar
  • 150ml Double Cream
  • 2 tsp Vanilla Extract

Method:

  1. Start by adding sugar and water to a pan and bring to the boil.
  2. Next, semi-whip the double cream and vanilla extract until you form soft peaks.
  3. Whisk together your egg yolks until pale and creamy, then slowly add your sugar water mixture.
  4. Whisk this mixture again until it has doubled in size.
  5. Fold in the cream and vanilla mixture until it is fully mixed together.
  6. Finally, serve up into glasses (tumblers or cocktail glasses work well) and leave to set in the freezer for 12 hours.
  7. Once set, you can customise however you please. A drizzle of caramel, nuts or broken biscuit works a treat!
