Cook the SPAR Natural Brown Rice according to pack instructions. Preheat oven and line baking tray with baking paper.
Pat tofu dry and drizzle with SPAR Natural Olive Oil and soy sauce. Place on baking tray and bake until gold brown around the edges.
In a bowl, prepare the coconut peanut sauce by mixing together all sauce ingredients.
Serve the SPAR Natural Brown Rice in four bowls, each topped with mango, spring onion, shredded red cabbage, radish, cucumber and avocado. Place baked tofu on top and sprinkle with coriander. Serve with the coconut peanut sauce and lime slices to taste.
