A good homemade peppercorn sauce is enough to take an ‘okay’ dish to an intensely satisfying meal you will always want to call on! Traditionally a yummy accompaniment to steak, it can also be added to roasted vegetables for a meat free alternative.

The Peppercorns

While classic peppercorn sauce includes just black peppercorns, if you can get your hands on a mix of red and green as well, it can make for a vibrant peppercorn sauce with a twist of different flavours.

The Sauce

The base of your peppercorn sauce, it’s important to get the flavour, colour, and consistency right to ensure your peppercorn sauce tastes exactly how it should. Not too thick, not too thin, and not too peppery! It’s a balancing act that, if done right, results in a perfect accompanying sauce for your next dinner.

How to Make Peppercorn Sauce

Step one Melt 1 tablespoon of butter in a heavy saucepan over medium-high heat. Make sure to keep an eye on it as butter can burn very quickly.

Step two Add shallots to your butter and sauté until they begin to brown. This usually takes about 5 minutes.

Step three Add your black peppercorns and crush with the back of a fork to help to mix these into the sauce.

Step four Add stock, brandy and cream and boil until the sauce is thick enough to coat the spoon, whisking occasionally.

Step five Once your sauce has reached the desired consistency, set aside, ready to serve!

How to Serve Homemade Peppercorn Sauce

Grilled Fillet Steak

Go traditional! Use your delicious peppercorn sauce alongside a fillet steak grilled to perfection. Serve with chunky chips and sizzling onions and peppers to recreate a gastro pub favourite.

Go Vegetarian!

For those with plant-based diets, this peppercorn sauce recipe can easily be adapted with a few considered ingredient swaps. This delicious sauce is perfect with a side of roasted tomatoes on the vine and your favourite vegetarian main dish.
