Fun Easter Cupcake Toppers
Get ready for some holiday fun with our Easter cupcakes recipe – made with a fluffy, soft sponge and some fun Easter cupcake toppers, this is an activity the whole family can enjoy! All you need is a sponge mix, some icing, marshmallows and a little bit of patience.
These sheep cupcakes are too cute to eat, but definitely too delicious not to. Whip up a batch at home and maybe deliver some to your friends and family to brighten up their day – that’s if you want to share, of course…
What you'll need:
110g soft butter or margarine
110g self-raising flour
1 tsp baking powder
110g caster sugar
½ tsp vanilla extract
Ready-made vanilla butter icing
Green fondant icing, mini marshmallows, mini eggs, sugar flowers and butterflies to decorate
- Place the softened butter or margarine, self-raising flour and caster sugar in a food processor with the baking powder, eggs and vanilla extract. Blend the mixture until smooth, to form a batter.
- Spoon the mixture into 12 fairy cake cases and bake at 180˚C for 15 minutes until golden and risen. Cool before decorating, as you don’t want the icing to melt – the more icing the better when it comes to making sheep cupcakes!
- To make your Easter cupcake toppers, spread the cakes with a teaspoon of ready-made butter icing, cover with mini marshmallows and finish with a sheep face.
- For the grass with flowers/chocolate eggs: Use green fondant icing pushed through a sieve, top with a sugar butterfly and flower decorations or mini eggs.
