7 days of recipes: Dinner ideas to see you through the week
Never has it been more difficult to be imaginative with food, than it is right now. At SPAR, we know that deciding on what to have to eat each night is probably at the bottom of everyone’s priorities. That’s why we’ve created a list of easy dinner ideas, one for each night of the week, with ingredients you might already have at home.
Don’t worry, if you haven’t got all of the ingredients, our recipes are completely flexible so feel free to experiment and create your own twist on the dish!
Monday: Chicken Fajitas
Ahh the humble fajita, spicy, succulent and oh so scrumptious. You can make these with as many ingredients as you like, or keep them simple and delicious. In their most basic form, these fun-filled tortillas just need chicken, peppers, onions and spices.
Need a veggie twist? Swap your chicken out for a meat-alternative or just load up on the greens. Haven’t got any peppers? Most vegetables will work in a fajita, so try asparagus, green beans, mushrooms, avocado and lettuce – the world is your tortilla!
Tuesday: Chorizo and Tomato Tagliatelle
Pasta? Check. Meat? Check. Sauce? Check.
Our chorizo and tomato tagliatelle recipe is a really easy dish to alter to what you’ve got in your cupboards. Why not substitute the chorizo for chicken or beef? If you haven’t got cherry tomatoes, try tinned tomatoes or passata instead. If you’re fresh out of tagliatelle, we think any pasta shape would work just as well with this one.
Wednesday: Spanish Omelette
What’s better than eggs for breakfast? Eggs for dinner!
Grab some eggs, add some chopped vegetables or meat, sprinkle on some seasoning and voilà! A hearty Spanish omelette that uses what you’ve got at home. Make this one fun and get the kids involved in chopping, cooking and serving up the dish (with adult supervision, of course!).
One of our favourite easy dinner ideas for vegans, this recipe is as tasty as it is easy to make. Using vegan staples including lentils, spinach and squash, this recipe can be cooked all in one pot – so not only is it nutritious, but it also saves on the washing up. Win, win!
Friday: Curry night!
So it’s not quite a takeaway, but we can pretend, right? This Friday night, treat yourself to a homemade curry with one of these simple recipes:

Saturday: Thai Fishcakes
This dinner recipe is straightforward and should only take around 25 minutes, start to finish. Perfect with fresh or frozen ingredients, you can make this dish with any white fish you’ve got at home.
Serve on a bed of salad with a side of oven cooked chips or with vegetables. The little ones will love tucking into this one!
Top tip: Keep the heat lower for a golden, crispy finish.
Sunday: The Perfect Roast
It wouldn’t be a Sunday without a roast dinner, and even being locked inside won’t keep us from our national tradition. The great thing about a Sunday roast is that you can choose the sides, vegetables and sauces – perfect for using up any leftover ingredients from the week.
