Mother’s Day is just around the corner; are you ready for the big day? Why not surprise Mum by making something homemade and special?

Mums are always telling us the importance of a good, hearty and healthy breakfast. So why not show your appreciation by making one for her? There are plenty of easy and delicious dishes to choose from that say Happy Mother’s Day! Here’s some food for thought when it comes to cooking up some Mother’s Day breakfast ideas…

Overnight Oats

You really don’t need to be a culinary expert. Mum will undoubtedly enjoy a simple but delicious bowl of oatmeal with fruit – overnight oats are super quick to make, and they do say that the simple things can often be the best! The only thing is you need to prepare them the night before.

Pop some oats and yoghurt into a container or bowl, and add a little fruit for extra flavour. Put it in the fridge overnight and voila - she’ll have her healthy Mother’s Day breakfast ready-made whenever she fancies it in the morning. Brownie points to you for being super organised!

Top Tip: When taking the overnight oats out of the fridge in the morning, if you find the mixture has gone a little hard, add a dash of milk and give it another mix before serving to Mum.

Granola and Greek Yoghurt

Not really feeling the fruity side of the fence for Mum on her special day? Live on the edge and opt for something a little sweeter. She’ll love starting her day by indulging in super tasty maple syrup granola, before she starts to relax…

With this Mother’s Day breakfast, the clue is in the title. Just pour some granola into your bowl and spoon in some yoghurt – natural, Greek or low fat will work fine. Poured too much in? A dash of milk will fix it, then drizzle your maple syrup and you have a yummy Mother’s Day breakfast ready to go.

Cinnamon French Toast

What about some fancy cinnamon French toast in less than 15 minutes? All you’ll need is a few eggs, 1/3 of a cup of milk, 1 tablespoon of sugar, ½ a teaspoon of vanilla, 4 slices of bread and a dash of cinnamon. Squirt some cooking spray onto your grill and preheat for roughly 5 minutes. Mix your eggs, milk, sugar and vanilla in a bowl and then drench the bread in your mixture.

Cook under the grill for roughly 4 minutes, until it’s ready. Drizzle some cinnamon, and ta da! Your cinnamon French toast is ready to serve as the perfect Mother’s Day breakfast.
